Do Dates Have to Be Refrigerated? The Short Answer and the Long One

No. A sealed retail package of dates sold from a US grocery shelf does not have to be refrigerated, because the fruit inside was dried or hydrated to a moisture level that made it shelf-stable before it reached the store. The Codex Alimentarius Standard for Dates (CODEX STAN 143-1985) caps moisture at 26% for cane-sugar varieties such as Deglet Noor and at 30% for the invert-sugar group that Medjool belongs to by composition. A Mejhoul sample measured by Younés Noutfia of Morocco's National Institute of Agricultural Research and Ewa Ropelewska of Poland's National Institute of Horticultural Research came in at 28.0% water content and a water activity of 0.652, under the 0.85 line the FDA Food Code uses to mark foods that need time and temperature control for safety. What refrigeration buys is shelf life. The WFLO Commodity Storage Manual gives a semi-soft date one month of good quality at 70°F (21°C), eight months at 40°F (4.4°C), and a year at 32°F (0°C). Fresh dates, sold soft at the khalal or rutab stage, are a different product and do require refrigeration.

The long answer is where the shopping decision lives. "Shelf-stable" is a claim about a specification, and specifications travel with the pallet rather than the tub. A 2 lb (907 g) container of Medjool carries a Best Before date and a lot code pointing back to a packing-house record. What that record fixes is moisture.

What moisture content decides about a date

CODEX STAN 143-1985 sets 26% for cane-sugar varieties containing mainly sucrose, naming Deglet Noor and Deglet Beidha, and 30% for invert-sugar varieties containing mainly glucose and fructose, naming Barhi, Saidy, Khadrawy, Halawy, Zahidi and Sayer. Medjool appears in neither list. The WFLO Commodity Storage Manual places it anyway: "The Barhee and Medjool are soft varieties and contain invert sugars," which puts a Medjool under the 30% ceiling by composition rather than by name.

Moisture is not fixed at harvest. WFLO records four maturity stages, khimri, khalal, rutab and tamar, with moisture running 45–85% at khalal, 30–45% at rutab, and under 30% at tamar. Almost everything sold in a US supermarket is tamar-stage fruit. The manual sets the practical dividing line for the storage question in one sentence: "Only dates that have been properly dehydrated can be kept any length of time without refrigeration."

Souring marks the failure point. Postharvest reference tables give 25% moisture as the level at which the fermentation that turns dates sour takes hold, and Mohammad Sarraf, a horticultural scientist at Islamic Azad University's Shiraz branch, reports with co-authors in a 2021 review in the Saudi Journal of Biological Sciences that yeast-infected dates develop an alcoholic odor above 25% moisture when held above 20°C (68°F). A Medjool at 28% in a warm kitchen is inside that window, and usually also inside intact packaging that keeps oxygen and ambient humidity out, which is why the failure stays rare.

How much time refrigeration actually buys

The WFLO manual, revised in 2008 with review by Dr. Louis Aung of the USDA-ARS Postharvest Quality Research Unit in Fresno and Dr. Elhadi Yahia of the Universidad Autónoma de Querétaro, publishes a temperature ladder for semi-soft dates at 20–30% moisture, all at 75% relative humidity or less:

Soft dates above 30% moisture get a shorter ladder: six months at 32°F (0°C), more than six months at 0°F (−18°C). The UC Davis Postharvest Technology Center draws the same split at 0°C and roughly 70–75% relative humidity, giving semi-dry cultivars such as Deglet Noor longer storage life than soft ones such as Medjool.

Humidity control matters because dates move moisture in both directions. WFLO warns that unwrapped fruit absorbs moisture readily from storage-room air and needs the room held below 75%, while in a 0°F freezer the same fruit gradually loses water. Sealed packaging sidesteps both problems: "If dates are stored wrapped with a moisture-vapor-proof material it is not necessary to control the air moisture." Noutfia and colleagues held 'Mejhoul' at 4°C for eight months and found browning and softening both more pronounced at 65% relative humidity than at 55%.

Cold is also how the trade moves the product. WFLO gives 45°F (7°C) as the upper maximum shipping temperature for dried fruit and 35 to 40°F for hot-weather transit; fruit reaching a shelf in October has often spent months at 32°F in a packer's cold room.

The number that decides this is not printed on the label

Microbiologists work from water activity rather than moisture percentage, and no retail date package reports it. Noutfia and Ropelewska's 2023 characterization of 'Mejhoul' in Agriculture recorded 0.652, alongside 62.1% total soluble solids, 58.8% total sugars, and a hardness of 694 g on fruit averaging 47.3 mm long.

That figure sits in an awkward place. The FDA Food Code treats water activity at or below 0.85 as outside the time/temperature-control-for-safety category, which is why dried fruit shares a shelf with crackers and nuts rather than a case with deli salads. The Code sends borderline pH and water-activity combinations to a "Product Assessment Required" box; a date at 0.652 comes nowhere near that boundary.

Spoilage organisms use a different scale. The University of California's Master Food Preserver program puts the lower limit for all microbial growth at 0.60; METER Group's water-activity references put the practical limit for xerophilic molds near 0.65. A Medjool at 0.652 is therefore below the pathogen threshold and level with the mold threshold. Work on Dhakki dates found freshly ripened fruit at 0.61 water activity and samples above 0.75 deteriorating rapidly with slime formation. Sarraf's review states the practical consequence: "Overall, current knowledge suggests that refrigeration is the best way to control pathogens in stored date fruits."

Fresh dates and packaged dates are not the same product

Shoppers treat every date as one category. The record that created the category disagrees. ALINORM 85/20, the report of the seventeenth session of the Codex Committee on Processed Fruits and Vegetables (Washington, D.C., February 1984), notes that some dates "were harvested at a point where they contained up to 40 to 50% moisture. Such 'fresh dates' were normally stored under refrigeration or were consumed in local markets." The committee drew its boundary: "It was not the intention of the Committee to standardize fresh dates containing high moisture content which were perishable and required refrigeration during marketing."

The same passage adds a line US shoppers rarely hear: "Refrigeration of dates with a moisture content of around 22-25% was also usual in the trade, even though such low moisture products offered for sale to the consumer were shelf-stable."

Fresh Barhi sold yellow and crisp at the khalal stage belongs in the first column and needs a refrigerator. A tub of Medjool from the produce aisle belongs in the second, whatever the display fixture suggested.

What to do once the tub is open

Bard Valley's Natural Delights states its storage instruction plainly on the brand FAQ: "Natural Delights preserve the best if kept in their tub or another airtight container or resealable bag in your refrigerator." Its storage guidance gives an opened package about three months at room temperature, up to six months refrigerated, and up to one year frozen.

The federal guidance is tighter. Registered dietitian nutritionist Sarah Klemm, writing for the Academy of Nutrition and Dietetics and drawing on the USDA FoodKeeper developed by the Food Safety and Inspection Service, gives dried fruit six months to a year unopened in the pantry, then: "After opening, use within one to three months or transfer to the fridge for a longer shelf life."

For a household, the arithmetic settles it. The nutrition panel on a 907 g tub sets a serving at two dates, 46 g, or roughly 20 servings per container; the grower grading standard WFLO records for US Medjool puts Jumbo fruit at 35 to 42 dates per kilogram. Two a day empties a 2 lb tub in under three weeks. The tub bought for occasional baking is the one that needs the fridge.

The procedure that follows from the sources:

  1. Record the Best Before date and lot code printed on the side of the tub before opening it.
  2. Reseal the dates in the original tub or an airtight container, pressing out air.
  3. Store them away from onions, garlic and potatoes; WFLO notes dates absorb volatiles from other commodities.
  4. Refrigerate at 40°F (4°C) or below for up to six months, or freeze at 0°F (−18°C) in moisture-vapor-proof packaging for up to a year.
  5. Warm cold dates gradually before unwrapping, which WFLO recommends to keep condensation off the fruit.

How long dates keep in the freezer, and what freezing costs

WFLO gives semi-soft dates over a year at 0°F (−18°C) and soft dates more than six months there. Sarraf's review reports dry dates at 20% moisture or lower holding more than a year at −18°C. Natural Delights caps its own freezer guidance at one year.

Freezing costs this fruit little. WFLO is direct: "There are no adverse effects of low temperature on dates even at freezing temperatures, and keeping quality of dates apparently improves as the temperature is lowered." Postharvest reference tables put the highest freezing point of dates at −15.7°C (3.7°F), which means a home freezer at 0°F freezes them solid while a refrigerator never does.

The cost is moisture. Dates in a 0°F freezer lose water gradually unless the packaging blocks vapor, so the sealed tub inside a freezer bag beats the tub alone.

White film on a date is almost always sugar

The most common reason a shopper reaches for this question is a white bloom on the skin. Natural Delights describes it in its FAQ: "A white, sugary film may appear on the Medjool date during storage due to the natural curing process of the date. This condition in no way affects the quality and may be removed with a damp cloth or eaten as is." The same FAQ attributes small grey spots under or through broken skin to the same crystallized sugars.

WFLO explains the mechanism and supplies a test. Sugar spotting is "a crystallization of sugars beneath the skin and in the flesh and may be reversed by gentle heating." It is more common in soft cultivars and in fruit between 22% and 33% moisture, exactly where a Medjool sits, and low storage temperatures delay or prevent it. Appearance and texture suffer; nothing else does.

Codex defines the thing worth worrying about narrowly, as "presence of mould filaments visible to the naked eye," and defines souring separately as "breakdown of the sugars into alcohol and acetic acid by yeasts and bacteria." The standard allows 1% by count for souring, mold and decay combined, against 7% for cosmetic blemishes. Fuzzy growth, green or black patches, sliminess, or a smell of alcohol means that date goes out. Dry white powder that wipes off, or melts back into the flesh under gentle warmth, is sugar.

Where the guidance disagrees

The 26% moisture cap has been contested since it was written. At the 1984 Codex session, Tunisia's delegation presented analysis showing Deglet Nour at approximately 27.1% moisture with 56.2% total sugar, argued that a moisture-to-sugar ratio of 1 to 2 kept the product stable, and called the 26% limit an unnecessary trade barrier. France proposed exempting Deglet Noor from the cap. The United Kingdom's delegation held that dates "were traditionally expected to be shelf-stable products" and opposed raising the ceiling. No agreement was reached; the committee referred it to a working group chaired by W.G. Aldershoff of the Netherlands. The 26% figure survived.

Storage advice diverges too. A packer's three months at room temperature roughly triples WFLO's one month at 70°F. Each protects something different. A brand protects eating quality in a sealed tub; a cold-storage manual protects graded bulk fruit against sugar spotting and insect activity.

Restatements drift. WFLO's own summary of the Codex size classes reports the medium band for unpitted dates as 80 to 90 fruits per 500 g; CODEX STAN 143-1985 gives 80 to 100. Discrepancies like that multiply as guidance is copied from standard to blog to product page, and the storage number a shopper finds online has usually made that trip.
